Can be used as a court-bouillon, to cook casseroles, stews and meat dishes, as well as periwinkles and seashells.

Works also extremely well in marinades for meat (roll the meat in a handful of court-bouillon then leave it to marinate for 2 hours, before cooking it in the oven or on a barbecue).
